Can a kit over ferment ??

Post by owbeeon » Fri May 22, 2009 10:01 pm

hi everyone,
just got a brewmaker cider de luxe fermenting, i made the kit up to 34 pints with 1.25kg of brewing sugar.
This has been bubbling like crazy for a week, thought id check it tonight, my sg was 1054, now its down to 1002 and still going???
can this/has this over done in any way, and will it taste any good???
also was planning to bottle this brew , will it carbonate after priming having dropped this low??
your thoughts would be appreciated !

Yes, expect a cider to drop below 1000 before finishing, around 996 is about the norm IIRC.

It will prime no problem - once the sugar is added, it will be off again!
