Post by fermorandy » Mon Aug 24, 2009 7:34 pm

Hi, ca n someone tell me if my brew is ok ? made my kit on saturday early eve,
put in in the down stairs cupboard and after about 6 hours it started bubbling nicely in the airlock, and did so all weekend,
then checked on monday morn and no bubbling at all, and still none now, the temp is 24degrees i didn't use the yeast that came with the kit
instead i used safale s -04, the kit is woodfordes admirals reserve, this is my first time brewing ,so would love it to be ok . hope someone can help. thanks in anticipation. :(

If it's been at 24C all weekend, it could well be finished.

You really need a hydrometer to test the specific gravity to be sure, just in case it is a stuck fermentation.

Are you intending to bottle the brew, or are you using a pressure barrel? If bottling you need to be sure - if kegging it's less critical.

Hi jim, no the temp was up at 28 then 26 most weekend, but thinking about it wen i put yeast on i think it was about 30.
didn't think it a problem because it did not mention in the instructions about temp when adding yeast. i'm going to keg.

at those kind of temperatures I wouldn't be surprised if the beer tastes a bit minging, ale fermentation temps shouldn't really exceed 24, remember that if the ambient room temp is 20 you can bet that the beer is a degree or two more.

I try and ferment at 19-20, the lower end of a yeasts temp range gives a cleaner taste.

yeah, that might be a good idea, my garage at the moment holds a good 18-21 which is ideal.

I'm not exactly sure what you mean by moving, but if you mean start fermenting again then no, like Jim said, a couple of days at that sort of temperature and it'll probably be finished

I'd keep it in the cool till the weekend then keg it.

It probably won't be too bad, it'll taste a bit spicey, cloves to be exact or maybe a tad like banana, or a lot of either or a combination of the two.

I had the same a few weeks back and the beer was a bit clovey but not too bad, a good idea for the summer is to make coopers kits or try to get some of their yeast as it takes high temps well.
