Help with Wherry please

I can't find this question so i am going to ask it.

Ive not yet done a Wherry kit and heard/read lots of differing stories regarding stuck fermentation, sooo the question is..Should i use the yeast packet in the kit or use Safale S04 instead??

Hi,

I used the yeast that came with it and had no problems, I would use the other yeast if the fermentation becomes stuck.

You see this is the problem, i have read Woodfordes kits are sticking half way through although newer kits seem to be ok. I have just bought my kit and the use by date is 31Jan 2011 so im not sure if it will ferment without problems, unless i just say sod it and use the Safale and hope it doen't upset the balance of the Wherry.

Like I said use the original yeast supplied and fall back on the other yeast if it does stick.

How did you get on with the NOG? did you use the supplied yeast for that??

I used the kit yeast, and it stopped half way at 1020 i roused it and it came down to 1015 and stayed there so i kegged it, it seemed to take ages to clear and not sure how clear it is now. Reading the forum a NOG is better left as it matures nice, last taste i was surprised how it had changed, quite a bit bitter than when it was first kegged, so i have left it in my garage until Xmas.

I've brewed a Wherry kit with Safale-04 and it turned out well - I've heard on this forum the kit supplied yeast is S-04 anyway. I've just done a St. Peters Ruby Red (same manufacturer as Wherry - Muntons) and the yeast cake certainly looked like S-04. I'd describe it looking a bit like the lunar surface with a slight green tinge, maybe that's just the lights though!

Didn't have any problems with using the supplied yeast with the Wherry I did a couple of months ago.
In fact, I've never had a problem with stuck fermentation on any kit that I've done. I always re-hydrate the yeast and add a teaspoon of yeast nutrient.

I've done about 2/3 of them & never had a problem using the supplied yeast or getting to 1.012/10 with it :)
keg 1 : (Drinking) : Amarillo extract brew
keg 2 : (Conditioning) : Summer Ale extract
keg 3 : (Conditioning) : Lightening extract Goldings only
keg 4 : (Conditioning) : Lightening etxract

FV1 : FV2 :
Bottled: Brewferm Diabolo, Brewferm frambois
next up: coppers stout:)

Whats the secret re the Headcracker "Plus" you have listed in your signiture i.e. what makes it plus!. I have a kit in FV right now and will be interested to see how it turns out.

Re the Wherry, mine stuck at 1.020 despite doing everything by the book, so I ended up racking it into another FV and pitching in some SO-4. It stayed in the FV for nearly three weeks in the end. I kept 3 pints back for "test" bottles and tried one this weekend after 4 weeks conditioning. It was great: crystal clear and with a creamy head. The barrel was okay but still slightly cloudy so I'll leave 'till Xmas.

Following on from the Wherry experience I ditched the kit yeast and went straight for pre-hydrated SO-4 with the Headcracker

Hiya,

The 'plus' is 500g of LDME added extra. It tasted a little sweet at first but i tried some the other night and it has calmed down a treat, a lovely drink (just wanted to experiment a little :twisted: oh i used S04 in that too with no troubles.

The wherry is bubbling away a treat at the moment i reckon it will slow down on wednesday so i will check the gravity the weekend.

Oh the Diabolo is a cracking drink if you like strong Belgian type beer :wink:
