Priming with Cocoa / Hot Chocolate

Post by chivelegs » Thu Jan 14, 2010 7:38 pm

Evening All.
An odd one maybe. Got my latest brew on, an Edme Stout; and was wondering whether priming with cocoa, drinking chocolate or a combination with sugar would be possible.

I really like Youngs Chocolate Stout, but didn't want to risk buggering up the whole brew by adding any chocolate at the beginning, so I'll have a trial run of priming 2 bottles or so unless anyone has had bad experiences?

Go ahead. What have you to lose? It's only two pints after all. Seems a very sensible idea to use a small control batch rather than messing up the whole 40 pints.

I may be tempted to use this approach in the future myself.

Mshergold did a porter using 200g of Bournville cocoa powder in the boil, which sounded very tempting just waiting for him to post the tasting result.

priming with cocoa powder on it's own wouldn't work as it's mainly fat not sugar so it won't provide anything for the yeast. In combination with some sugar it could work though it's probably not the best thing to add in dry as it doesn't like to mix in with water. I've got a cooper's stout conditioning in a barrel at the moment that i added some cocoa to when i brewed it. When i rinsed out the can i put the rinsings into a pan and boiling that up with some cocoa powder so that it would mix in properly(the heat helps also). hopefully should be nice.

Having spoken to the missus, I'll have to agree. She suggested there was not enough natural sugar in raw cocoa powder and too many additives in drinking chocolate.

Still, should turn out OK, I guess.

I did a brewmakers stout kit for a mates wedding which I boiled for a short time with 100 grams of cocoa and it turned out very tasty.

All sounds a bit mental to me, but it's your brew, you can do what you want I suppose ! no point priming with anything other than sugar in my opinion, as adding anything else ,this late in the process, won't have any effect on taste. Some people prime with spraymalt, waste of time and money. Its the start of fermentation when you need to add your extras. Hope it all goes well anyway. Keep posting your queries.

As a point of interest, but slightly off topic.........I have been experimenting with a variety of priming methods for Turbo Cider. They are mainly based on adding cordial with and without sugar. I don't have the full results yet, but the one's I have tasted have been well carbonated and retained the fruit flavour from the cordial (which was the main aim)
