Coopers fermented out too quick? :O

Post by Hoppkins » Thu Feb 22, 2007 4:45 pm

I set a coopers real ale kit going early sunday morning.

It started ~1.040 gravity after 800g of spray malt and 300g sugar.

Came to it today and there was no more airlock activity. Checked gravity and its 1.000

Thats too fast surely? I took a taste and although a bit watery i dont think it's supposed to be very strong tasting. It's not unpleasant.

Does this sound ok?

Absolutely fine 8)

I'm going to bottle some of this tohelp carbonate it. When would be best to do that? Teaspoon of sugar is fine to prime with right? (Never bottled before)

Rest will be kegged.

I should wait a couple of days right to let more of the sediment drop out?

Option 2.
It'll taste cleaner, look better and be easier to pour especially from bottles.
Beer always matures better in bulk also :)

As Andy says at SG1.000 it's going to be a little dry.
Try priming with malt extract dissolved in boiling water.
75g dissolved in 250 ml water stirred into 23 liters will do the job nicely

Not got any more malt sadly and the HB shop is miles away :(

Will have to do with sugar. Since im bottling it and wanted a beer to have kinda cold then dry wouldn't be such a bad thing :/ Maybe my hydro is broken.

Read the gravity of my malibu ok though and a glass of water.

I should think the hydro is okay if it's reading around 1.000 in water. 8)

Ok, if using sugar directions as my previous post but reduce the sugar down to 60g

I'll see if i can get to the brew shop as i'd much rather have a proper tasting beer than a thin one.

Since i took the sample the airlock is actually showing low activity again.

Strange.

ok looks like i might not get near the brew shop tomorrow for the spray malt BUT wilkos sell that weird beer "enhancer" which is a mix of spray malt and dextrose.

Do you think this would be better than sugar for bottling as mentioned in an above post? (Tubby)

Yes I think that it will be marinally better than just sugar.
It will leave some unfermentables in your bottles but at the addition rates for priming these would be very small, but hey, " Every little helps "
I have no idea about the sugar ratios in beer kit enhancer but if you use the 75g / 250ml dilution you will be safe 8)

Hmm well maybe if there is a little sugar in the enhancer mix it might take some of the dryness off?

The beer kit enhancer is all sugar
What I don't know is what ratio of slow fermenting dextrins are in there.
I have no experience of using this product but if what I have read is correct it supplies body and mouthfeel to cheaper kits, so it must contain a ratio of unfermentables which is what you are aiming to put back into your dry beer :D
Any reticence in my reply is only that I do not want to recommend a priming ratio that will under or over carbonate the beer that you are bottling :?
My gut feel is that 75g will be OK 8)
