Keeping extract

Hi all, I'm about to embark on my first kit for over 15 years, but resolved to substitute malt extract for sugar as previous brews were always a bit thin.

My question is, if I only use part of a can of extract, can I store the rest? How long will it last and how is it best stored?

Do you already have a can of extract? If not, you may want to consider using Dry Malt Extract.....

I personally wouldn't advise keeping LME in the can once you open it so if you can get this into a sealable storage container then this would be great.

There is something in cans (all food cans) that when opened the inner lining reacts to the air and causes the contents to spoil...

No, I haven't bought any LME - how much DME should I go for - I can pop out to the Hop Inn this afternoon...

You can use equal amounts f DME to sugar.

Most kits require 1kg of sugar, so use that much DME.

BTW, where are you from? I use The Hop Inn in Reading....

I tend to only use the Hop Inn for emergency top up. If you want to get Hops or anything then I would advise that you check the date on them I bought some about 6 months ago and they were 4 months out of date.

A great place when you want a few little things, awful if you want to do a decent brew (lack of yeast alone is quite dissapointing!)

Yep, noticed that - I've got most stuff online, but checked out Hop Inn before and after a delivery to see what stuck to the shelves - as for the yeast, there's a choice of one and they're all out of date. Hope they'll have some DME this afternoon though. Cheers.

Guys, that sounds like a very poor shop!

My LHBS has a 1/2 price bin where they put any kits/extract etc which goes out of date.

True enough, but it's the only place in town, AFAIK. Hence the use of online sources where time is not critical.

It isn't so much a homebrw shop as an off license that has a small amount of brew stuff in stock.

It is mainly geared toward the kit brewer. They do have a few different grains and a small selection of hops (fuggles, golding, saaz and halleteur).

Not bad to pick up a few bits and bobs, but not any good to make a serius brew!

I haven't been able to find anywhere within a decent distance. I have found ordering online great. The only problem is that none of the delivery guys will deliver to my neighbours. I have started to get things delivered to my wifes work place so she can bring it home. Not too sure how she will react when I next order 25kg of grain though!!!!

surely there's more than one HBS in Reading? If not maybe you guys should open one :)

That liquid malt extract is about 1/3 cheaper than the spray so I use a whole tins in recipes and make up any extra using the spray malt. Spray malt is easier to weigh, store, handle etc. however it reacts with the moisture in the air very quickly so it needs to be in a sealed container. Personally I just tend to use the lot.

There is only the one LHBS in Reading and believe me I have hunted for others.

I am fairly happy with ordering everything online and using it as a base to get a couple of ingredients I find I may need and can't justify the shipping cost.

It is a long long way from being a good store, but useful in an emergency! Also, I'm not sure that there is enough demand to justify opening a shop myself.
