when brewing lager kits, how do you check the gravity if the lager is being fermented at a lower temp

cheers, want to do a lager kit for summer, now that i have found my old fridge upstairs is reading a constant 10 deg c, that would be perfect for brewing with a lager yeast with say saflager wouldnt it??

ok so as soon as ive pitched it at 18-20deg can it then go straight to the cold.

also can you reccomend a good lager for the way im gonna ferment
