High ambient fermentation temps.

Post by Monkeybrew » Mon Apr 18, 2011 1:29 pm

I am currently fermenting some Muntons Midas Touch in my spare room. Now that the weather has picked up, this room never drops below 21C at night and can get as high as 24C in the day. Will these higher temps affect my brew?

This room is ideal for me because its out of the way of my 4 year old daughter!

The increase in temperature will not hurt the yeast, in-fact they are usually happier at temps slightly warmer than what brewers prefer.
But the warmer you ferment the quicker the yeast's metabolism and the more fusel alcohols, esters and ethanol will be produced, in particular acetaldehyde may be expected to increase due to the faster fermentation.

While you might notice these changes in two control batches fermented at different temps, that does not mean your individual batch will be noticeably different or that you should expect the beer not to turn out well. If anything it might be have some more esters and yeast derived flavours and you may notice a slight increase in hot-alcohol type taste, however any changes will also be related to the ingredients and other factors and so it's not really anything to worry about too much.

24C is getting a tad high for me. I certainly wouldn't want to see it get to 25 or 26.
You maybe need to find a cooler place if you are planning to brew through the summer months.

Cheers for the comprehensive answer :)

I will leave it where it is then.

Sorry, just noticed your reply.

I will probably move my FV downstairs into the kitchen for anymore summer brewing, much to the Wife's distaste :x
