quick yeast question!

I have today bought Woodfords Great Eastern Ale and notice that there's lots of stuff on the forum about the yeast being a bit dodgy! I do happen to have a spare pack of Safale which has a use by date of Dec 2008. It's been in a cool cupboard for 4 months but i'm not sure whether it should have been stored in the fridge!

Shall I use it?

The dried yeast should be fine. Most shops don't keep it in a fridge anyway (although it would keep better if they did).

I would go for the Safale, and some yeast nutrient if you have any.

It should be fine to use the safale IMO.

It's best to store yeast in the fridge, but it's probably fine nonetheless. My local homebrew shop doesn't store its dried yeast in the fridge, and I've only recently started putting my yeast in the fridge, and I've never experienced a stuck fermentation :wink:

I started a Great Eastern on Tuesday evening (see my thread near this one) and I put in two Gervin sachets (22g) in a starter instead of the Muntons 8g sprinkled on, just to be on the safe side, and also gave it a shot of Yeast-Vit.

It's bubbling quicker than I count still, but then it is early days...
