There seems to be a concensus that Brupaks kits are amongst the top choices. I'm a little bemused that these premium kits require additional malt/sugar (compared to say a 3kg liquid kit) as per this from the home-brew-shop.co.uk listing .....
You have 3 choices to make the beer depending on style and cost.
This is a vegetarian Society Approved beer kit
1) Use 1kg sugar ( Corn Sugar is better as this dissolves in cold water) for a light-bodied beer with a pronounced hop character.
2) Use 1kg of Extra Light Dried malt Extract ( Spraymalt ) This will produce a beer with more body and a maltier profile, hops are still in evidence.
3) Use 1.5kg of Brupaks Pale Malt Extract This method produces a truly commercial quality beer with a fuller body and a higher alcohol content.
What is the approx. SG & estimated ABV of one of these kits (eg, Brewer's Choice ESB) with & without the recommended extra malt? Is there a copy of the instructions for one of these kits available online?

I want to produce (at my bro-in-law's request) a premium bitter of around 5 - 5.5% abv so I'm guessing adding an extra kg spraymalt on top of the recommended 1kg but will this unbalance the brew unduly? Would the use of the 1.5kg of LME be a better choice instead?
I don't want to end up turning out a brew that is unbalanced for the sake of a bit more alcohol.
