different instructions
hello i've started a brewers choice dusseldorf alt on the kit packet it says it sould ferment at 18/22c but the yeast that comes with the pack is brewferm lager which sould ferment at a lower temp which instructions sould i follow the pack or yeasts
I'm not an expert but I would either follow the lager yeasts instructions - iirc the best fermentation temp is about 14C
OR
follow the kit instruction but replace the yeast with an ale yeast (Gervin English for example).
Hopefully Daab or Jim should be able to comment further
hope this helps,
Stephen

Alts are funny beasts - you want cleaner flavours than a british ale but more esters than a lager. That's probably why the lager yeast is included - it's not really 'right' but should get you in the ball park at 18C. The alternative would be to use Nottingham or US-05 at cooler temps.
S-04 would be right out.
Fermentis do a yeast, K-97, that, although they sell it as a wheat yeast, it's more likely a German ale yeast and would probably work quite well in this style of beer. Sadly they don't sell it in packs smaller than 500g. You can get it from overseas stores that have repackaged it themselves though in 11g packs. I'd recommend craftbrewer in Australia if interested. An airmail letter costs less than £2.50 and you can get quite a few packs in a letter.
