A couple of things...

Just a quick post to ask another couple of questions of you more experienced brewers. 'Fixby First' has now been in primary for 10 days. OG was 1045, now down to 1018. I added a teaspoon of Young's Yeast Nutrient two days ago when it seemed to be stuck at 1020ish. Temperature has been a pretty constant 20oC. My questions are:

1. Assuming I get another reading of 1018 tomorrow, can I safely bottle this now? The gravity is a little higher than I anticipated but it's now been 10 days and I think I should be bottling. What would happen if I roused, perhaps pitched another sachet of Safale and left it until the weekend? Can you leave a brew in primary fermentation for too long?

2. I have had a couple of sneaky tasters from the FV and both times the beer seems pretty well carbonated. I don't want to overprime and end up with a glass of froth at the end of it. Does priming with 60g of glucose seem reasonable?

Thanks for your help!

Thanks DaaB, excellent advice as ever. Haven't got hold of any plastic reseals yet but will take a trip to Wilkinson to see if they have any.

With the PET bottles I assume you just use the screwcap which was originally on the bottle?
