Bottle or ditch?

Post by beer fortress » Mon Oct 08, 2007 8:25 pm

Hello all,

I started a brewferm tripple on Thursday 20th sep and its still in the fermenter. As its now over 3 weeks will it still be ok to bottle or should I ditch it? I gave it a try last week and it tasted awful, will it improve when conditioning? Am slightly worried that it’s infected as none of my other kits have tasted that bad out of the fermenter.

Did you use sugar? I would say the apple flavour is a result of that. I used I Brewferm kit before Xmas last year. After about 2 months in the bottle come Xmas day it was drinkable but not all that moorish. After leaving it for a further 3 months in the bottle chilling in the fridge it was lovely. No off tastes from the sugar and good body and head retention.

Bottle it and give it a couple of months or better save it as an Xmas present to yourself.

That's the classic description of an infection I'm afraid. You'd probably be better off ditching it I'm afraid :(

could just be acetaldehyde, which the yeast might converst if you leave it on yeast and rouse the yeast at room temp, for a week or so.
