BUBBLES....!!!!

Post by andyjc » Fri Dec 28, 2007 1:42 pm

Have just transfered my Headcracker to King-Keg T.T but have an important question.

Feremented in bin for 10 days. Safale s-04 yeast was used and had v.good foamey head on top 24 hrs later. Looked at after 5 days and head had died down, bubbles could be seen on surface, and were rising from below. Day 10 and few bubbles still on surface but none seen rising so off to barrel we went, primming with 85g of Medium Spray Malt. After transfering to barrell via tap on bin ( and using tube on tap to reach bottom of barrell ) about 15 to 20mm of grey/brown sludge was left at bottom of bin. I pressume this was the yeast that had travelled through the wort, thus fermenting it.
Does all of this sound good or bad!!!

Sounds pretty normal to me.

The sludge is the yeast slurry.

After you've added the yeast to the wort it gets to work multiplying and converting all those lovely sugars into alcohol. During this it produces CO2 which you've seen with all those bubbles and foam.
After a week or two most of the multiplied yeast should have settled to the bottom of your FV and allowing you to rack it to secondary/cask/bottle as per your taste. You'll still have a small amount of yeast in suspension in the resulting container which will continue to settle so take care when pouring or moving things around - you'll see more settled yeast if you look at the bottle of a bottle you've just (carefully) poured.
