Compleat list of all I've made... (some still in progress, obv)
Some great, some pretty poor, most just average. Only one got dumped though - grape juice. Looking back I realise it was grossly undersugared and only about 5%. Not good for a wine!
Most of the wines are single gallons, or 2 gallons, a few were more. Most of the TC was two gallons at a time, but I've done a couple of bigger batches

I'm looking at doing a blackberry wine in the next couple of weeks. Interested in your Brambleplus... Any good? What recipe did you follow?

Well... I could look it up, but... We just got back from visiting friends on the Isle of Wight.
As we were packing to go I grabbed a few bottles at random to try out on our friends and two that were lush were both mixed berries wines.
I find a mix of berries tend to work better, unless you want it to be a "this berry" wine.
I usually use 3 to 4 lb of berries per gallon. Up to 2kg, in fact
We tend to get a lot of rassies here, both wild and garden, so most of my mixed ones have at least 1lb of rassies as a base. Rassies can be slightly odd on their own but are good mixed in with other stuff, and provide most of the acidity you want.
So then I add the berry or currant I'm wanting to use up.
And I find a couple of ounces per gallon of blackcurrant makes anything much more winelike - failing that, chooped raisins.
So that's the "don't follow recipes blindly, have fun banging things together" advice
Now, the ones that worked well...

2012-01-25
1238g raspberries, 443g blackberries, 344g blackcurrants
Thawed into large SS pan with Campden, 1lb sugar, 1l boiled water, pectolase.
Mashed gently when thawed. Transferred to fermenting buckets.
2012-01-27
Rehydrated Gervin GV2, 1/2 sachet & tsp nutrient
2012-01-30
Strain onto 1.5lb sugar in demi
2012-03-14
Racked with sulphite, despite still bubbling. Tasting good.
2012-03-23
Bottled with sulphite. Taste good, slight rawness, will be nice soon.
