Hey,
just a quick question, when is the right time to rack to secondary fermentation?
Thanks,
Ben.

Re: Secondary
It depends on the kit. Some state that you should wait till the fermentation is fully complete, & others, ie selection estate, say you should rack it at gravity 1010 & let it ferment out.
I've let some of my selection kits ferment without racking at 1010 when time has been lacking, all I've done then is make sure that a small amount of the sediment is transferred when you do rack it. I believe that the finings need some of the sediment to "cling" to, therefore they will drop out of suspension.

I'll usually transfer mine once clear after finings have been added if it's a kit,
But if it's a hedgerow I'll do it just after stabilised.

Re: Secondary
I should mention that I don't use kits these days for wines or beers to be honest, that why I'm asking no instructions
