Anyone got a good recipe for Port

Hi Guys

As the title suggests, I'm looking for a good recipe for Port, I'm looking to make a 23litre batch to keep the in laws happy at Christmas, any ideas?

Elderberry wine can sometimes taste like a red port.

Just found this in CJJ Berry's First Steps....


English Port (for 1 gallon)

2lb Elderberries
2lb Blackberries
1lb Sloes
1lb Blackcurrants
quarter of a pint of red grape concentrate
3lb sugar
Vitamin B1 tablet
Pectolase
Port yeast & nutrient

I haven't tried this recipe as it looks like a bit of a chore. Some people take his sugar quantities as a guide as some wines can turn out too sweet.

Failing that, make an Elderberry wine and fortify it with Brandy (could be expensive for 5 gallons though)?

*EDIT* Thinking about it, I'm not sure how good an Elderberry wine will be if drunk young. I usually leave mine for a year or two.....

I make a damson port in a similar sort of way. Take a blackberry wine and the left over damsons that I have used for damson gin, pour the wine on top of them, leave for a couple of months and decant, not sure how strong it is but there is enough left over alcohol from the used damsons to give it enough of a kick, does need about a year to develop but can taste nice enough in time for Xmas.
