How much sugar?
How much sugar?
If I'm brewing 23 litres of Elderberry or Elderflower wine, how much sugar should this volume have? I've been guessing mine. First one came out perfect but second one was sweet but still high in alcohol. I can't even remember how much sugar I put in so next time I'll take advice from here.

1 to 1.25 kg per gallon, depending how strong you want it.
So 5 to 6.25kg in 23 l
Rule of thumb: 20g/l=1%
This is slightly conservative but you lose a bit when racking so it evens out

Watch out for the difference between "in a gallon" and "added to a gallon". Earlier post suggested 1.5kg for 5l, sounds high, but is ok if added to a full 5l
