I'd start off making a dry wine and, seen this in Jamie Oliver's show, just Soda Stream it. Saves faffing about with thick bottles, wire tops etc for the first time.

You can just make a wine kit as normal but using a sparkling wine yeast and add priming sugar when bottling (the same way as bear and cider) around 5-8g per litre. You could use beer or cider bottles or even plastic soda bottles (not if you plan to keep it long) if you can't find wine bottles suitable to hold the pressure. You will get sediment in the bottom of the bottles so open and pour carefully discarding the last bit.
