Strawberry wine, the best tasting I have made so far!

Post by ncmcdonald » Tue Jan 24, 2017 3:31 pm

I made this wine with frozen strawberries and I think it is my best one yet. Super fresh tasting and nice balanced acidity as well as being nice and crisp.

Strawberry Wine Ingredients – Makes 4.5 litres / 1 gallon

1.8 kg Strawberries
1 kg Sugar
4 litres Water
1 Campden Tablet
1 tsp Acid Blend or Citric Acid
1 tsp Yeast Nutrient
1/2 tsp Pectic Enzyme
1/8 tsp Tannin
1 sachet Champagne Yeast / Lalvin EC-111

I have posted up the methods here if you are interested.

Strawberry is one of my favourite wines. I haven't made it for a few years as I can't seem to get cheap Strawberries anymore. I used to keep an eye out in Co-op for when they reduced the price (500g for 38p was the best I got) but haven't managed to find any lately :(

Hi Mark have you tried the jam grade ones from Barra near Oldmeldrum? I got a pile of rasps off them one year for a wit, cheap and ideal.

Hi Jambo,

I did think about them this year for some strawbs, but didn't manage to get there. I will have to plan better next year!

We like it enough that I'm happy to buy a bag of frozen ones from Costco every once in a while

Good idea, I hadn't thought about Costco for frozen strawberries. I'm not a member but know someone who is :D

Looks delish. The method in the other link is unclear to me. I can see the berries in the bag but what do you do with it after that - tie it up and put it inside the container or do you just leave as is in which case I'd be curious as to whether still a good seal around the FV.

Also - what straining bag are you using ?

Looked at some of your other posts on the other site - impressive , well done !

I hack the berries into smallish chunks and ferment on the pulp with maybe half the sugar for a few days
Then I pour it all into my missus's Lakeland jam straining gear which is a nylon (I think) bag supported by a metal frame
Enough pulp gets through when I've squeezed it good and hard to get the liquid out that it gives a great snowglobe effect in the demijohn

Cheers. Do you discard the pulp-nylon ball after the good squeeze or do you tie it up into a ball and leave in the FV ?
