Beaverdale Blush and sauvignon blanc kits turned out too sweet.

Post by sheeprug » Sat Apr 11, 2020 9:23 pm

I've made these kits several times and the past - my good lady likes them - and been very happy with the results. However, the last couple of times they've ended up a little sweet. Not having a decent hydrometer at the time I can't tell you a reliable final gravity, ( iknow - not very helpful!) but I'm wondering if anybody else had had similar experience?

Best SR.

Actually I think i've worked out what was going wrong. The latest blush is just about ready for bottling and early indications are it's going to be good. I think the difference is I took great care this time to make sure the concentrate was fully mixed into the added water. I suspect if you don't do this well some of the sugars don't ferment fully in the far corners of the FV. Thus even if the hydrometer reading is looking good, after filtering and stablising the unfermented sugars get combined, leaving a sweeter wine. Just a theory anyway!
