Hi returned to the fold due to lockdown,so after 20 years started winemaking again.I had a lot of cherries frozen from last year from my garden so i started off a must on 18 april with a sg of 1.1 ,put into demijohns on 25 april sg 1.03 (i think a bit early,maybe too eager lol) re racked off the lees on 2 may sg 1.03 , just checked sg today 7 may sg 1.02 ,.had a little sip when syphoning a bit sweet but pleasant ,( hazy but no more lees )if it stays at 1.02 say in 2 weeks would you bottle or leave longer ? ,and if its a bit sweet any easy way to make it less sweet without thinning it out too much ? Thanks to all,

ps got some plums in the freezer to try next . :D :D

If it’s still hazy there is a decent chance it will drop more sediment given enough time. I wouldn’t be in such a rush to get it bottled, give it time to drop clear, sort itself out then think about bottling.
