Elderflower Champagne and Mould
Elderflower Champagne and Mould
Hello,
I am making my first batch of elderflower champagne. Its been fermenting about for about 3 days and I have noticed what looks like little areas of mould. Can advise me if this is ok or if I can skim them off the top or if I have to start a new batch?

Are you sure it isn't yeast flocs?

Hello mm.I`m also planning my first elderflower champagne as soon as the elder in my hedgerow comes into bloom.
There are early signs its starting to.You must live further south than i do.Anyway i hope orlando`s right about it only being flocs.

Did you use a CT/SodMet solution or boiling water to deal with wild yeast?

I`ve got my Champers on the go today when i got in from work.
700g of sugar.
Zest and juice from 4 lemons.
2 TBS of white wine vinegar.
15 elderflower heads in a 6l batch.
I`m on holiday now for 17 days which is the first time of since early Febuary
It should be ready for my return to work

Hello WA.I added a pinch of yeast but no nutrients.
Its a recipe from `River Cottage`.It says to add a pinch of yeast after a couple of days if there are no signs of fermentation,but i added a pinch from the start anyway.I did an elderberry wine a few year back which turned out good.Its my first champagne though so fingers crossed.
The answer to your next question is that the OG was 1.044:lol:

Well there is no sign of mould with this one of mine or any sign of fermentation!!!
I managed to get my hands on a packet of GV10 sparkling white wine yeast and pitched the whole 5g in.
Whats to lose?The yeast was only £1.25 which probalby cost me more than the ingredients i`ve already used.

Today however i bottled into 1l grolsch lid style bottles and expect to celebrate my return to work by this time next week xx
