Did your neighbour manage to find something to dry out her wine?

When starting a recipe, don't overdo the sugar so all of it ferments out leaving a drier wine. You can also add tannin (either in powder form or brew up 3 or 4 teabags in a mug of hot water but don't stew them)

If the wine is finished and sweet you can blend the sweet wine with something a lot drier to try to dry it out.

I wonder if adding Gypsum would work? Might be worth trying it in a small glass first before adding to the bulk.

I once made a carrot wine that finished sweet so, in my infinite wisdom, decided I'd use it as a mixer with vodka. It tasted lovely, but things did get very messy......!
