I've made some ok cider and some awful cider (taking the enamel of teeth, puckering mouth cider) from freshly pressed scrumped apples. I understand that good cider is a blend of bittersweet, sharp and sweet apples or cider and wonder how folk have gone about doing this? I don't have access to cider apples like Dabinets but can get hold of a good selection of deserts and culinarys from peoples gardens. I have used sulphite and cider yeast but would like to do the real spontaneous stuff.

Here is a great website for cider making info http://www.cider.org.uk/sulphite.html, one third cookers and two thirds eaters is a good balance but best to go on PH level
