Can I use wine yeast in my turbo cider instead of cider yeast?

Yes

That's all I've ever used in turbo cider.

Thank you. Do you add any other fermentables, apart from fruit juice?

For your 1st batch of turbo cider I wouldn't. There's more than enough sugar in the apple juice alone to produce something with a high ABV.

Yes, of course, it's all just Saccharomyces cerevisiae. It'll work perfectly.
