Hi all. I was pointed in the direction of some apple trees 'cookers,eaters and russets' at the weekend. The russets turned out to be pears! Anyway,juiced them yesterday,got 10 litres at 1038,added sugar to 1050,pectinol,yeast nutrient gone in. Came across WLP616 Funky cider yeast
Going to pitch after dinner,has anybody used it before? Cider yeast and Brett.

Well,l had my first bottle of this! It’s gorgeous. The yeast brings out the pear flavour,and there’s also a bit of sweetness left. I’d recommend this yeast for something a bit special.

Don't drink it too quickly. It is still young and will probably get better with a bit more ageing.
