I did a three gallon batch: one gallon of opal juice, one gallon of honeycrisp juice, and one gallon of pink lady juice and S-05.
Once fermentation was done I added a pound and a half of unsweetened dried coconut.
I bottled at the three week mark with a couple of ounces of cane sugar.
It came out kind of cloudy but very tasty. The coconut was there but subtle.
I don't do cider often, but would do it again if I can find the large chunks of coconut where I'm now living: the small shreds are a pain in the arse.
