6th AG since October American Pale Ale

Post by Madbrewer » Tue Dec 11, 2007 7:35 pm

Just mashed this today it's my 6th this year. The Recipes based on a Papazian (Amazing Ale) but as I had no given OG or IBU rating I went for a 42IBU, OG1.044 and for once obtianed a whisker over the 23litre mark as (opposed to under it).

My Spreadsheet stolen from some website and amended (simplified) was used to double check my hopping rates and expected brew lenghths though I have to admit that I do round up/down the malts to suit i.e. 454g /19 then multipled by 23 gives 549g, I went with 500 for my Crustal and flaked maize similarly the 4000g Pale Malt figures not spot on either. For what it's worth the after-boil small was amazing and I am having good feeling's about this one. First time ever putting a 'Hallertau' in an Ale for me though.

Pale Malt (I used Maris Otter) 4000g
Crystal Malt 500g
Flaked Maize 500g

25g Fuggles 4.8 aa (90 min)
28g Cascade 6.9 aa (90 min)
14g Hallertau 3.8 aa (10 min)

Safale S04 used this time, am usually a Hook Norton Yeast Fan but decided to give the Safale a go this time

Look forward to posting a progress report

Initial tastes are very good indeed. Though if I repeat this I will attempt to get a bit more bitterness in there as though this is really good for a couple of pints, quite a sweet/bodyful beer to stick to all night.

All Gone! Blimey went quick too. Bottles a few for mates to test a bottling of bright beers approach. Think I will rate this a 8 out of 10.

I must have missed this thread, sounds like a nice one MB, what do you think the flaked maize added to the brew ?

Probably showing my ignorance here. I think it lowered the 'sweetness' as to be honest if you tried a REAL session on it - it could become a little sweet/cloying. However I sort of got used to it without realising ... as on new years eve myself and the wifes step-dad-to-be managed to get through 9 litres between us though that was an extended session! (For me anyway) Strangely enough he took his offered cans of John Smiths back home with him and had an more elevated view of what home brew really is! I'm prattling on again I know the point is ... first taste it has a lot of body - I think (and feel free to shout me down) the FM reduced slightly the sweetening effect of the crystal. What's interesting is the 'end taste' where you make out the Hallertau - would never have thought of it myself, will defnetely be repeating this brew. Since that post have had two more enouraging comments though admitttedly one guy did say it's a pity the head dissappeared so quickly.

You could add a small proportion of wheat malt to help aid head retention, that or leave it for a bit longer. Sounds like a nice beer though

Thanks for that MB, it's not something I've used before so I thought I'd ask.

Why is it whenever I visit my Dad & he says he's got some bitter in for me it's always cans of John Smiths or Tetleys :?

It's like Coca Cola - you see it everywhere therefore everyone must like it right? ........ sort of logic.
