Ecellent IPA from brewferm Extract

I have just tasted my latest recipe. Another killer brew. I love this home brewing malarkey!

I will try to remember the recipe, I had it all written down but left it in my jeans and my girlfriend washed them without checking the pockets. That'll teach me!!

Anyway, here goes...

Ingredients --------------------

1 x Brewferm pils kit (just use the malt, not the yeast sachet)
1 x Danstar Nottingham ale yeast
500g Light DME
500g Brewing sugar (Maize)

1 oz EKG (15 mins)
1/2 oz Saaz (5 mins)

1 oz EKG (dry hopping)
1 oz Bramling Cross (dry hopping, could just use 2 oz EKG instead, i think these give a fruitier flavour)
3 Cardomoms (Just felt like adding them, don't know if they added anything but it turned out nicely citrousy)

Method ------------------------

bring 2 lots of 3 litres of water to the boil ( 1 for wort, one for softening brewferm malt extract)

turn the heat off one of the pans and Stick the brewferm malt extract into it.

with the other pan....

add 500g DME + 500g Brewing sugar (I know this gives the boil a massive gravity, about 1110, but it seemed to work well)
bring to boil again
add 1 oz EKG + Cardomoms
boil for 10 mins
add 1/2 oz Saaz
boil for 5 mins

open the malt extract can and pour into fermentter.

rinse out the can with the wort from the pan and pour into fermenter.

fill fermenter up to 21 litres with cold water.

empty yeast sachet into fermenter covering the whole surface

aereate the wort for half hour.

if you dont have an aereator leave for half hour then stir gently.

stick the fermentation lock on.

ferment at room temp 23 deg c

primary should be done in 2 to 3 days

transfer to secondary

add dry hops

ferment on for 3 weeks

bottle and condition in room temp 30 deg c for 4 days

cool condition for as long as you can( ususally 2 days for me!!!)
