Interesting question, I'd like to know this one myself
As I understand it, Torrified Wheat is unmalted so I don't think you would get as many fermentable sugars as Wheat Malt
After trying a recipe with wheat malt I now add it to most brews as it adds a fantastic flavour that is hard to describe but is definitely a good thing. It seems to accentuate the beer taste if anything. About 5-10% per recipe.
