Help - Recipe needed

Hi all,

I need a recipe for a 10 gallon brew using Ingredients I already have.

I have-

15kg MO
2kg Crystal
2.5kg Torrified wheat
100g Northdown 7.9%
94g Cascade 7.1%
40g Challenger 7%

I have recently made a hollywood IPA which was great and a very nice strong bitter with all goldings so something a bit different then these would be nice but anything would do.

Otherwise I will have to just make it up in Beersmith but was hoping for a good tried and tested brew, maybe a session beer of some kind.

Keep it simple, IMO. You don't say what yeast or what configuration your hops are in so I assumed hop pellets and listed S-04 for the yeast. You may adjust as required. :wink: As an homage to the recent Cascade or Challenger hop thread I have made this an all-Challenger brew.

Where will the extra 15g of Challenger come from? :?

Thanks BigEd,

Do you reckon I could use the cascade in place of the challenger as its the same AA% as the recipe? Mine are whole hops so does that make a difference, shouldnt think so but I don't know as I have never used pellets? I have some S-04 and some US-05 I like S-04 better though so would probably use that.

Oops, I didn't notice I used an extra 15g of hops you didn't have. :oops: For whole hops you need about 10% more by weight to get the same bittering as pellets.
I would use the Northdown in the bittering addition to make up the difference and keep the late addition of Challenger. I don't like Cascade at all and would not use it myself in a bitter. If you are fond of it perhaps try subbing it for the aroma addition of Challenger. Between the 05 and 04 yeast I would go with the 05 for this brew.

love Challenger, and if you have it will unashamedly suggest:

1.045-ish
90% Pale Malt
10% Crystal
24 IBU's full boil
6 IBU's 15 mins
Aroma if you fancy
Yeast of your choice (S-04 good, Notts not so good)


Pretty much followed this a couple of days ago. Went for 1042 SG and chucked 200g torrefied wheat into the mash. I used 10g challenger at 80c for aroma. Cheers for the recipe - looking forward to this one. Never used challenger before...
How about this but using cascade for the late additions? Then we can compare notes when they're done :D
