Hey guys,

I am planning a brewday this weekend and having tried a bottle of "Ossian" by the Inveralmond Brewery and being blown away, I wanted to try something similar.

The information I have listed from the site is that it is a 4.1% ABV brew and contains malted barley, malted wheat, first gold, pearle and cascade hops.

It is a golden ale, so I was thinking that perhaps 90% MO + 10% Wheat malt or torrefied wheat, any thoughts?

Not sure at all about the hops. I don't know the bitterness but I would have thought around 35 IBU would be a good ballpark figure. I think I am right in assuming all those hops are aroma hops, does anyone have any suggestions in what order I should add them to the boil?? From memory my pearle are 6.9%, my first gold are 8.3% and my cascade are 6.5%..

Playing around in Beersmith, I have come up with the following, basing my hop choice on the Brupaks guide which states Pearle are usually added as copper hops and first gold are good for late hopping:

Mash @ 66C for 90 mins:
4Kg Maris Otter (~95%)
0.25Kg Wheat Malt (~5%)

Boil for 90 mins:

30g Pearle for 90 mins
20g Cascade for 15 mins
15g First Gold for 15 mins
15g First gold at flame out

OG is ~1.042 giving a brew in the low 4% ABV range and total IBU is ~40

Couple of questions:
1. Will 5% wheat malt be enough? Or do I need to increase this to get a more pronounced effect?

2. Does the hop addition schedule look good? If not, any tweaks??
