I've dried my home-grown First Gold hops now, and fancy making a big old stylee beer with'em. From what I've read around and about the interweb first gold weighs in around 7.5%AA. So using this figure I put together this.

Ingredients
25L, 90min mash at 66°C, 90min boil
Amount Item Type % or IBU
7.00 kg Maris Otter (5.9 EBC) Grain 100.00 %
90.00 gm First Gold [7.50 %] (90 min) Hops 61.1 IBU
2 Pkgs SafAle English Ale (DCL Yeast #S-04) Yeast-Ale

Beer Profile
Est Original Gravity: 1.067 SG
Est Final Gravity: 1.014 SG
Estimated Alcohol by Vol: 6.87 %
Bitterness: 61.1 IBU
Est Color: 11.2

Am reckoning on this taking perhaps 6 months to get to it's peak. Looking at the Durden Park book, historical beers really should be quite simple, this seems to fit that bill :wink:

Why be shocked? Is there something wrong there. I hope not, ive got 2 brews on the go thats 100% MO. Getting a bit fed up of maltyness as the past (think) 4 brews were full of chocolate, black & crystal.

Presumably it is unusual to use all pale malt for a beer of this strength?
Drinking: Double IPA (Mr President Clone)
Drinking: London Porter (5%)
Drinking: Belgian Dubbel (8%)
Conditioning: West Coast Red (5.6%)
Conditioning: Nelson & Friends Series No.1 (Mosaic)
FV: A few spiders
Planning: Everything else!

Not at all unusual in historic beers.

This beer may be put on hold...I came home tonight to find that my boys 6 month old cat has climbed on my beer fridge, budged open a tap which has meant that a corni and my gas are now empty, and my yard floor beery. With stocks down unexpectedly I may sneak in another reasonable maturer before doing this one. :evil:

I make beers of 7.5% and above using just MO all the time, works really well for bringing out the hop profile if used in conjunction with a neutral yeast.
