Winter Royal from Marcs book is a belter. Tastes exactly the same in the pub and has a lovely ruby red appearance. I brew it every year about this time :D

Ah, I do have that one. It basically uses 5.8Kg Pale, 300g crystal, then target to bitter and styrian in last 15mins.

What could be used instead of target?

I also like this recipe, done it several times. Beersmith recommend EKG but I find it hard to get the same intensity as Target with any other hop and wouldnt recommend substituting.

The best target replacing hop I've used is Willamette. You could also try a shite load of Fuggles :D
