Any good recipes using Simcoe?

I have a 90g Craftbrewer pack of Simcoe and would like a good recipe to use them on, I've got most other hops that will go with it so it doesn't have to be a one-hop-brew, any suggestions? cheers

I've usually seen it in combo with other C-hops. Apparently it works well with Amarillo. I guess you could try them out with an SNPA style recipe but with Simcoe and some other C-hops for finishing.

There's an IPA brewed in San Diego called Duet, which features Amarillo and Simcoe. These two hops go together nicely. Get yourself some Amarillo, and go for it.

You read my mind Garth, I thought I'd ordered the hops I needed for an APA in Jamil's 'Brewing classic styles' book but ordered Simcoe instead of Horizon for some reason #-o

I suppose I'll just use the Simcoe instead.

BTW, does anyone know what our equivalent of Victory malt is ?

I needed to know that about Victory last year, can't remember I got an answer though

I certainly did, I can't remember why I didn't order Horizon, maybe he didn't have any in at the time.

I got myself one of those hopsocks that looks like a big mesh rubber johnny too so I'll be trying that out for the first time.

I might put in a bit of crystal in place of the Victory :-k

When I asked him Jamil said to try Biscuit Malt as a sub for Victory. You can get the Belgian version as it's a Brewpaks item.

You could use Simcoe for bittering although it's a bit different to Horizon. Horizon is a nice bittering hop as it's very clean - a bit like Magnum and possibly Warrior.

Stone do a 4.4% ABV pale ale that uses Magnum for bittering and Crystal, Amarillo and Simcoe for aroma.

Cheers Steve, I'll bear that in mind.

I'll be using the crystal this time 'til I can get some biscuit malt though, brewing it tomorrow hopefully

I can't recall what's in Jamil's APA recipe but I've had good results when using 4% 120EBC Crystal and the rest being pale malt.
