My Chrimbo Ale

Post by aceuass » Mon Oct 20, 2008 12:05 am

Hey guys, I wanted to share my Christmas beer recipe to get some feedback.
I decided to only do 2 gallons though as I`m not a big fan of spiced beers.
4.9lb 2 row UK malt (what I have in closet)
.6lb white wheat (also what is in the closet)
.5lb crystal 60
.5lb light brown sugar(60 min boil)
.5oz cascade (6.3%) 60 min
1oz cascade (6.3%) 20 min
1 Whirlfloc 15 min
1oz crushed cinnamon 5 min
1oz lightly crushed coriander 5 min
1oz sweet orange peel 5 min
1 tspn crushed ginger 5 min
1 tspn crushed nutmeg 5 min
1056 american ale yeast
Going by Beersmith, I`m looking at around 8.5% ABV, certainly a winter warmer, and we need it here.
Any suggestions, I`m looking to brew this week.
Cheers
Paul

Not bad if you like that sort of thing. There's going to be very little hop, and a ton of spices.

Looks more like liquid curry than beer. As Whorst politely pointed out, there is a LOT of spice in there. How about making half a gallon?

As others have said - thats a lot pf spices going in there.

Are you allowing enough time for the flavours to meld ?

Cheers for the replies,
I will recalculate the spices, would you suggest halving the lot.
