I'm going to brew this Thursday but with a few modifications to fill two of the three cornies I have coming. This is for a 45l batch which should give me enough to lose to fill 2 x 19 litre kegs.

0.60 kg Wheat, Torrified (1.7 SRM) Grain

Yep, I'm adding the torrified wheat as it seems to have helped with head retention and I have some laying around to use.

Boil for 90 min Boil Ingredients

I've opted to go for the final EKG at 1 minute rather than 15 for a more 'hoppy' taste.

2 Pkgs SafAle English Ale (DCL Yeast #S-04) Yeast-Ale

The hops I have coming are higher AA content too (Fuggles 4.4% and EKG 5.7%) but as I've never tried either before I'll just go with a complete guesstimate and see what happens. Biggest issue is batch sparging 10 gallons in the Thermos MT but I'm going to do it in two batches to be safe. Yeah, it's another 90 minutes mashing but I have nothing lined up for Thursday so I'll go this route rather than risk buttock-clenching moments with a MT that's full to bursting.

Any suggestions on what I should change? Beersmith is giving me an estimated OG of 1.056 and I'd be happy with that, I much prefer my beers to end up around the 5% mark rather than the lighter, session beers.
