Porter with liqurice
Porter with liqurice
I am doing this porter and decided to give it a go with some liqurice root. I have got 40 grams from health food store will this be enough or will I need more and what should I do with it chop it up or in whole, going to put it in for the last 15 minutes of the boil.
This is my own recipe put together after looking at loads and think it should be very tasty, hopefully .
Here's the recipe
Black magic woman porter
30litre
OG 1056
EBU 28
Pale malt 5.889
Crystal malt 0.392
Amber malt 0.300
Chocolate malt 0.235
Roast Barly 0.194
Wheat malt 0.188
Hops
Start of boil
Goldings
Target
Not worked the hops out yet

Thanks for the replies I will chuck it in whole and see how it comes out, not too sure if 40 grams will be enough though. I am going to cut a bit of and give it a chew to see how strong the flavour is , might get another pack and put a bit more in.

If it's any help I did a porter last weekend, with vanilla, I added 1 pod split in two for the last 15 min of boil, in tasting there was a hint of it but nothing strong which I think is where you should be aiming, if you put too much in it will overpower everything, as regards the hops for a brown porter the maltyness should be the main feature so I put them in for 60 min and no aroma, a robust porter is different and will have higher sg and can take more hops.

I've used this concoction of 'adulterants' based of a recipe from the mid 1800's. It actually came out really well. Im not partial to liquorice but I quite liked this. The liquorice wasn't overpowering but definitely there. The burn sugar gave a nice twang on the finish.
Stout porter
To 5 gal of good porter (1.050) add:
- 100g burnt sugar
- 60g clarified
- 20g licorice hard candy
- 10g ground licorice root
Boil 2.5 hours (60min is fine)

I put in 2 x 4inch sticks of dried root for a 50lt brew.
It was a bit old so may have lost some flavour.
Porter is tasting ok, but its early days yet and i dont expect it to get good until crimbo at the earliest.
Not sure i can taste the liqourice yet as the hops are still overpowering.
