Dark Star Brewery Beers
Re: Dark Star Brewery Beers
Interesting looking monthly specials. I cant see Over The Moon Mild on the list though - I hope that doesnt mean they've stopped making it?
Re: Dark Star Brewery Beers
Im going to try this Hophead recipe for my first AG brew, I am going to keg it and use a pressure barrel for the first time. My barrel doesnt have a gas regulator just a screw cap. Once out of the primary FV do I have to do a secondary? Should I prime the barrel? How long will it last with dry hopping?Ingredients

Re: Dark Star Brewery Beers
Hi, do whatever you like but because I recognised that recipe I thought i'd post where I'm up to now refining a clone of Hophead.
The recipe below is based on grain bill from telecon with brewery, hop schedule likewise (low early bitterness, huge addition 5mins from end), and I've chosen to use just Notts yeast whereas the brewery uses a blend of Notts/S-04/US-05.
Will be a couple of weeks until I try this.
Ingredients
23L @ 85% effiiciency, 90min mash @ 67°C, 90min boil, GW's liquor = bitter
Amount Item Type % or IBU
3.27 kg Maris Otter (5.9 EBC) Grain 98.00 %
0.07 kg Caramel/Crystal Malt - 55L (120.0 EBC) Grain 2.00 %
10.00 gm Cascade [7.20 %] (90 min) Hops 7.9 IBU
180.00 gm Cascade [5.34 %] (5 min) Hops 19.8 IBU
1 Pkgs Nottingham (Danstar #-) Yeast-Ale
Beer Profile
Est Original Gravity: 1.039 SG
Est Final Gravity: 1.009 SG
Estimated Alcohol by Vol: 3.84 %
Bitterness: 27.7 IBU
Est Color: 8.9 EBC
I'll primary ferment for 7 days, and assuming FG reached for 2 days keg from there with table sugar for priming. If you dry hop it's advisable (from experience) to do so for 4-7 days and then remove the hops, they go horribly grassy otherwise.

Re: Dark Star Brewery Beers
Any thoughts on what the "specially imported yeast from the USA" is for the American Pale Ale? I was drinking this on Friday night and it was a fantastic pint.
US-05 I believe is an American style yeast but isn't from America, so maybe it's a whitelabs WLP001 or something similar?

POTTER BREWERY (mothballed 2020)
Fermenting: nowt (sadly). Drinking: still a few bottles of my imperial stout knocking about . . . it's rather good now

My money's on US-05 because although it's not made in America it is very similar (same as) to WLP001/WY1056/Chico.
