Just thought I'd post a thread to boost the hope of any homebrewers who taste their brew and think, "this sucks."
I brewed this Bitter about a month and a half ago:
Invisible Bike Bitter
4.5 lb. Light DME
.5 lb. 75L British Crystal Malt
.25 lb. Biscuit Malt
1 oz. Goldings for 60 min.
.5 oz. Fuggles for 30 min
.5 oz. Fuggles for 2 min
Safale s-04 Yeast
I accidentally fermented it on the high side--actually wort temp ~72F--and it came out very hazy, very "thick" tasting, with huge green apple aroma and generally not yummy. I was really bummed and even dumped a few 2-pint bottles that I needed for another endeavor. Well, after a month in the bottle, I must say that the Invisible Bike has made a major comeback. Sometime in the last week or two the weirdness and apple aroma dissipated, allowing the delicate Fuggle flavor to become noticeable. My wife even asked for one after tasting mine! And she doesn't really like beer. God is good--even to the beer.
