I am brewing a stout this weekend. This is the basic recipe for a 23ltr batch
Ingredient Colour Weight Ratio
Chocolate Malt 1050 EBC 325 grams 5.7%
Crystal Malt 130 EBC 380 grams 6.7%
Flaked Barley 0 EBC 620 grams 10.8%
Pale Malt 5 EBC 4130 grams 72.2%
Roasted Barley 1350 EBC 260 grams 4.6%
Any recommendations on which hops to use, based on what I have in stock - Fuggles, Boadicea, EKG, First Gold and Willamette.
I was planning on about 34 EBU's.
I also have a choice of S-04, Nottingham and Windsor yeasts - I have only ever used S-04, but would any particular one suit this style?

i would go for 80gms EKG, 90 min boil sould give about the right EBU's
