Tribute recipe wanted

Post by oopsthathurts » Wed Feb 25, 2009 2:55 pm

Anyone got a recipe for Tribute ?
I am told it should be relatively easy ! (Yea that's why i can't find it ?)
It must use a sugar that leaves a bit of sweetness behind me thinks, and must use a good hop that leaves plenty of fruityness?
I would imagine, as been as this recipe was made by their head brewer, for a one off brew in order to celebrate a "Tribute" , that it uses UK hops ?

Anyone got the nerve to ring him up and ask him ?

The hops are Fuggles, Styrian Goldings, and Williamette.

Hi

No help with the recipe but I visited the brewery last year and was told Tribute was first brewed as celebrate the the total Eclipse and was originally called 'Daylight Robbery' this didn't go down well with the punters so the renamed it 'Tribute'

When I visited I saw the hops in the sacks waiting to go in and they were as sib67 says.

I believe one of their ales are bottle conditioned (Admirals Ale) so if you can get hold of it you could possibly culture the yeast (if its viable)

Cheers

Hi,
Yup, your all right, the hops they use.
Their all aroma hops, but i am a bit confused with qty to start experimenting with.
I would imagine fuggles go in first at the highest levels, (90 mins boil) then i thought perhaps styrian similar levels (at same time) then willamette lower levels (same time 90mins), then Willamette at higher levels for last 15 mins, for the fruity flavour, there is little hop flavour because of fruit and sweetness, I would not have thought dry hopping, but welcome suggestions and feedback ?
Also, Tribute has a very slight sweet flavour, (this is what works excellently with the fruity taste !) so this will need a sugar that leaves behind a little sweetness, any ideas anyone on what and at what level ?

God! beer recipes are such fun !

You should read this thread
viewtopic.php?f=5&t=8952&p=112513&hilit ... ll#p112513
and try either my recipe (not the very 1st suggestion which would be way off but the one i did) or the one with more munich malt added on later. Mine was very good, maybe just add a few more late/steeped styrians but i reckon it was close.
Drinking: Double IPA (Mr President Clone)
Drinking: London Porter (5%)
Drinking: Belgian Dubbel (8%)
Conditioning: West Coast Red (5.6%)
Conditioning: Nelson & Friends Series No.1 (Mosaic)
FV: A few spiders
Planning: Everything else!

This is what I did (which is very similar to smp465's):

23L 70%efficiency
3.7kg Maris Otter
1 kg Munich
250g T.Wheat

Willamette (6.6%) 90 mins 13g
Fuggle (3.6%) 90 mins 20g
Willamette (6.6%) 15 mins 18g
Fuggle (3.6%) 15 mins 32g
Styrian Goldings (4.4%) at 80C 25g

This is still conditioning, but the few samples I had tasted really good. I used HopBack yeast so I wasn't expecting a perfect clone, but it's very very nice nonetheless!
Does anyone know if StAustell Brewery use their primary strain in their bottle conditioned ales?
