heres one ive done once or twice and got a few good results, im producing a one barrel batch at the mo for my bar with the brewery test kit. it takes an age to make, by the time its matured continents will have moved and new life evolved
but its worth it..........
for five gallons
lager malt 4.5kg
flaiked maize 700g
torrified wheat 700g
125l crystal malt 250g
500ldark malt 150g
mash for 90 mins at 67.5
boil shedule 90 mins
@start add
5.5%whitbred goldings 28g
tettnang 20g
15 mins from end add
saaz 28 g
irish moss 1 tsp
mature in a cask for a few months(pref 4)
then rack off into a clean cask with 4kg of stoned black cherries(ive used tins of cherries in JUICE not syrup before with no problem#s if you cant be bothered with stoning washing and boiling fresh uns.)
leave for a further 6 weeks, bottle or down straight from the cask, its quite similar to liefmans kriek and packs one helluva punch about 7%abv
