AG#3 Recipe Smily Sam

Thanks to my mate Shane for the recipe, It's not quite the same as his brew I tried on our last beer tasting evening in Cambridge but so close I'm interested in comparing beers at the next brew meet. Shane uses as far as I can tell the 'Dry Pale Ale' water profile and he also used US-05 yeast, fermented at 18deg. I used the standard Bitter profile using Salfal-S04 yeast (Hindsight suggests I should have used Nottingham as it was the nearest I had to the US-05 but maybe next time) and had to ferment at 20-21deg as I do not have a temp controlled fermenter box as yet. (Next DIY job on the list)

Anyway the Recipe is as follows for 25L @ 85% Efficiency which I seem to be doing.

Grains

Pale Malt 5000gm
Wheat Malt 250gm
Caravinne Malt 100gm

Hop Schedule
90min - Simcoe 12.9AA 10gm
10min - Amarillo 8.2AA 32gm, Simcoe 12.9AA 32gm
Post Boil 80C for 30min - Amarillo 8.2AA 28gm, Simcoe 12.9AA 28gm

Yeast Salifert -S04
OG 1.053 Expected SG 1.012 for a 5.3% ABV

A really nice flavourful and full aroma summer ale, a little high on the alcohol for my normal preference but will bring the OG down nearer to the 4% mark the next time I do this brew once I have identified what I like and don't like about it.
