Light coloured beer with fresh elderflowers recipe?

Post by OldThumper » Mon Jun 01, 2009 1:39 pm

Hi all,

Now that the elderflowers are almost ready for picking (in Hampshire at least) I am hoping to make a nice easy drinker summer ale with a nice elderflower aroma. I have spent some time searching on here and on Google but have not come across a simple recipe yet. Does anybody have one? A nice 4% easy drinking light coloured beer is what I am really after.

Failing that can I simply choose any golden ale/bitter recipe and add something like 50g of fresh elderflowers just before the end of the boil to get that nice elderflower aroma? e.g. in a summer lightning clone

I have just picked up 25Kg of low colour marris otter pale malt as well as come Boadicea, Cascade and Challenger hops and fresh yeast so I am ready to go :)

Thanks for any pointers guys!

P.S. Does using low colour pale malt make any difference to the pale malt quantity in recipes? e.g. as it is roasted less does this affect the sugar level during mash?

Here's a nice one that I was given by Booldawg

Pete's Badger's Golden Glory

Fermentable Colour lb: oz Grams Ratio
Crystal Malt 130 EBC 0 lbs. 6.0 oz 170 grams 3.9%
Pale Malt 5 EBC 8 lbs. 4.3 oz 3750 grams 86%
Torrefied Wheat 4 EBC 0 lbs. 7.9 oz 225 grams 5.2%
Flaked Maize 0 EBC 0 lbs. 7.5 oz 215 grams 4.9%

Hop Variety Type Alpha Time lb: oz grams Ratio
Elderflower Whole 0.4 % 15 mins 0 lbs. 1.8 oz 50 grams 42.4%
Challenger Whole 7.6 % 90 mins 0 lbs. 1.5 oz 43 grams 36.4%
Golding Whole 5.7 % 0 mins 0 lbs. 0.9 oz 25 grams 21.2%

Final Volume: 25 Litres
Original Gravity: 1.039
Final Gravity: 1.009
Alcohol Content: 3.9% ABV
Total Liquor: 34.9 Litres
Mash Liquor: 10.9 Litres
Mash Efficiency: 75 %
Bitterness: 37 EBU
Colour: 13 EBC

Initially when green tasted of old cardboard, as previously stated on here. But when given time to condition properly I have to say it's one of my favourites and it's a nice 4% easy drinking light coloured beer. Trouble is it gets drunk too soon

Slightly off topic but related - if you want a great example of this sort of beer, check out '7 Giraffes' by McWilliam Bros. Excellent beer, really nice. Had some bought for me by my dad at xmas, think he got if from Tesco, but worth hunting out.

Another good example of this would be Trade Winds from Cairngorm Brewery. Sorry no recipe for it though. I'll put it on my list of things to do(oh the hardship of it all)!
