I've got a quick question about post boil hop additions. I recently brewed up Graham's Brakspear bitter, which includes a post-boil addition of styrian goldings. I was aiming to cool the wort to 80C and then chuck them in. A time wasn't stated so I assumed I'd just on with the cooling after they went in, but am now wondering if I should have left the wort at 80C for a while with the hops in before later cooling down to pitching temp?
In fact what happened is that the cooler worked so well it shot the wort down to 50C before I got a chance to get the hops in, and then I carried on cooling to 23C, before transferring it over straight away - might have stuffed that up a bit!
