Wit / Fruit beer

Post by MDE » Thu Jul 23, 2009 9:06 am

This may be a stupid idea, but I am thinking of brewing a wit-style beer and then turning some of it into various fruit beers. In particular, I have a surfeit of raspberries and thought that chucking some into the secondary might yield an interesting result. Has anyone tried anything like this? Any suggestions on a "base beer" recipe and on quantities of fruit to add? Also, should I soak the raspberries in sulphite solution for a day before adding, to get rid of any wild yeasts?

I haven't done a wit base but I regularly do fruit beers on a wheat beer base.
I do 50/50 wheat/pils malt, noble hops to a relatively low IBU, about 15, and then various yeasts. The dry yeast wb06 I like because it has some spice aspects but not the esters of the bavarian wheat yeasts.

I actually put the fruit in the primary, after the bulk of fermentation is complete.
I don't worry about and preparation of the fruit other than freezing and defrosting it.

I then rack the beer off the fruit into secondary and crash chill so as to get rid of any small pulpy bits left behind because these can lead to gushers in the bottle...

I think a wit would work well, just make your base beer and then add the fruit as above...

I do the same as bconnery :D

All I would add is use a high mash temp or include some cara-pils for body, the fruit can dry the beer out and make it seem a little fruit-cordial like.
