Schneider Weisse???

Looking on another forum, I found this, it seems to be roughly worked up from a (per bottle) recipe card from the Schneider restaurant, though the hopping is a bit vague and the ABV is way off as the Schneider Weisse is about 5.4% (I stuck it into Beer Engine to have a look)
Yeast could be cultured from a couple of bottles of shop bought I presume. Does anyone have a better recipe or tweak this one?
Schneider Weisse

Fermentable Colour lb: oz Grams Ratio
Wheat Malt 3.5 EBC 5 lbs. 8.7 oz 2520 grams 59.1%
Lager Malt 2.5 EBC 3 lbs. 11.3 oz 1680 grams 39.5%
Carafa Special III 1200 EBC 0 lbs. 2.1 oz 59 grams 1.4%

Hop Variety Type Alpha Time lb: oz grams Ratio
Hallertauer Hersbrucker Whole 2.9 % 90 mins 0 lbs. 1.4 oz 40 grams 100%

Final Volume: 23 Litres
Original Gravity: 1.042
Final Gravity: 1.010
Alcohol Content: 4.1% ABV
Total Liquor: 33.7 Litres
Mash Liquor: 10.6 Litres
Mash Efficiency: 75 %
Bitterness: 13.498740461328 EBU
Colour: 27 EBC

Its the only hefe brewer i know of the using the primary yeast for bottling, the yeast will be the main thing a grist of any where form 50% what to 60% will get you in the ball park IMO

So the hopping and bitterness isn't that important then?

I would put monry that the IBU's are some where between 12-15 with one 60 min addition, a German hop would be good but since it so low IBU I think you could get away with an English hop

I've got some Hersbrucker, but I suppose that could be saved for something more worthy of the aroma.

Looks good but that appears to be a lot of carafa III
