Winter Warmer:- thoughts thoughts please

Post by Deebee » Fri Sep 04, 2009 11:00 am

Norway and scandinavia generally has lager type beers on tap in all the pubs.. and for me it all tastes the same.

Christmas time however the different breweries all make the years christmas beer.

Sadly it is to my mind way too fizzy, and tastes like a darker version of the year round lager types so i thought i would have a look at making something.

My favourite winer beer of all time is youngs Winter warmer, A nice hoppy taste and a little alcoholic afterburn.

Although i do not think this will be anywhere near i would estimate maybe somewhere around the 1058 mark OG. Was thinking of either london, SA-o4 or Wylabs ESB for this one.

Here is what i have ( i'll punch it into beersmith later when i get home.

Winter warmer

5kg. Maris Otter ( or other pale depending what is available.
.5kg. Crystal
,125 kg.english Chocolate
Boil Additions
2 oz. Willamette (60 min)
1 oz. Willamette (10 min)

Can someone let me know wat they think. I might suggest that there should be more hops in there. I have willamette that i have never used so if someone feels that another hop might be better ( cascade maybe or challenger and northdown?) then please let me know.
thanks

cascade and northdown go well together, since its a supping brew why not up the abv a bit more, ie 6 Kg of MO instead of the 5.

Thanks Delboy, SHould i up the hops too?

I think i had the options on beersmith set for a 19 l brew length so i'll likey change that for the brew length that i want.

Northdown and Cascade sounds good, any suggestions as to order and amounts
